“Let’s Taco ’bout a Plant-based Diet”

In collaboration with Bon Appétit Management Co., students in lecturer Narcisz Fejes’ SAGES class, “Savor: The Ethics and Politics of Eating,” will present a “deep dish taco pie” to showcase “planetary health diets” intended to benefit both human health and the environment. The event, titled “Let’s Taco ‘bout a Plant-based Diet,” will take place Friday, Nov. 15, from noon to 1 p.m. in the Leutner Commons cafeteria. 

Coined by the EAT-Lancet Commission, planetary health diets aim to ensure we have the ability to feed 9 billion people by 2050 in healthy and environmentally sustainable ways. Students are invited to try the creative meal the class designed and learn about what a global food system transformation entails to mitigate climate change and optimize human health.

Chefs Jonathan Barger and Derek Ivancic will cook the meal and serve it at the Fresh Table station. Look for the deep dish taco sign.
